Burritos for Christmas?!!!

Sitting back and relishing in the afterglow of a meal well planned, well prepared, and of course well eaten, I thought about how the entire vegetarian movement had effected the traditional Christmas dinner.

Of course, the very oldest tradition included a Christmas Goose with all the trimmings, separate dishes of pork (ham), plenty of dairy and of course, Chocolate!!

Our dinner consisted of Mexican Burritos made with squash, sweet potato, onions, light amounts of cheese properly baked.  Served with black beans, chopped onion, lettuce, sour cream (with soy), rice, crescent rolls, and fresh corn scrapped from the cob (yes, plenty of salsa).  Certainly not traditional in Midwestern American but I wonder if this meal would have more interest in the southwest or would even be served in Mexico for such an occasion.
